You can always change your email address, or add more to your account.

You need to always have at least one active verified email address.

You can go to Accounts and Settings / Accounts / Emails and add more. After you add a new email address, you will receive a message with a confirmation link in it, on which you have to click in order to verify the address.

At that point, you will have more than one active verified email addresses, so you can delete the one you no longer want. In other words - you do not "edit" the address but always have to add another one first, confirm it, then remove the old one.
